Miso Chicken with Green Beans

Super tasty mid-week meal that is extremely quick, easy and unbelievably tasty!

Ingredients

  • vegetable or another neutral cooking oil

  • 3-4 cloves of garlic, crushed or finely chopped

  • 2 tablespoon white miso (I use the Koku Culture Biodynamic Brown Rice White Miso)

  • 1.5 tablespoon honey

  • 1/2 tablespoon Shaoxing wine (can use Sherry or Mirin if you don’t have Shaoxing Wine)

  • 1/2 tablespoon rice vinegar

  • 2 teaspoon sesame oil

  • 300-400g green beans, trimmed

  • 1-2 small (free range) chicken breast, finely sliced

  • 2 tablespoons black sesame seeds

  • 2 shallots, finely sliced

  • 2 long red chilli, finely sliced (optional)

Method

  1. In a non-reactive bowl whisk together the garlic, miso, honey, Shaoxing wine, rice vinegar, sesame oil and 2 tbsp water. It should turn into a sort of thick and runny mixture.

  2. In a wok, heat two tablespoons of oil over a high heat then add the beans. Stir-fry the beans for about 2-3 minutes or until they are a bit wilted but still hold shape. Add the sliced chicken and then stir-fry until golden brown.

  3. Push the mixture to one side of the wok and then add the miso mixture to the other side of the pan, cook the miso mixture for about 1-2 minutes. Then mix the miso mixture in with the chicken and beans until fully incorporated for another 2 minutes.

  4. Divide into 2-4 bowls over rice (or cauliflower rice if you’re into that!) Sprinkle the black sesame seeds, shallots and fresh chilli on top and you’re done like a dinner!
